The article goes into a lot of detail on scientific studies about olive oil, and how to use and store olive oil to preserve its beneficial components.
It also mentions that olive oil improves the ratio of good cholestoral to bad cholestoral. Elsewhere there is an MS study showing that people with MS who have a healthy ratio of cholestoral also have less disability.
There might also be a connection here to the benefits of the Swank diet?
