Benefits of Olive Oil for endothelial health

Postby ThisIsMA » Tue May 18, 2010 12:39 pm

Here's an intriguing quote from the internet re: Olive Oil and endothelial health:

<< By reducing both inflammation and free radical damage to cholesterol, dietary olive oil protects the endothelium, the lining of our blood vessels, helping to maintain its ability to relax and dilate. >>

The quote came from:

The article goes into a lot of detail on scientific studies about olive oil, and how to use and store olive oil to preserve its beneficial components.

It also mentions that olive oil improves the ratio of good cholestoral to bad cholestoral. Elsewhere there is an MS study showing that people with MS who have a healthy ratio of cholestoral also have less disability.

There might also be a connection here to the benefits of the Swank diet?
