"In Defense of Food"

Hi all...

I've been lurking for a while and decided that this is the time to post...

First, let me say I'm absolutely impressed with the quality of posts/info here...really...it's all a bit overwhelming! It will take me time to really digest it but I'm particularly interested in the CSVI stuff...it's really compelling!

So...here's the thing...I just finished this book and found it to be very interesting. Especially in regard to Michael Pollan's (admittedly vague) reference to "Western Diseases" ...could MS be one of these?

I'm someone who eats well, but doesn't follow any specific regimen. The only supplement I currently take is Vitamin D (2000mg/day).

I'm still "percolating" the book and all it says...just wondering if anyone else here has read it and what they're thinking.

Saw Michael Pollen on Colbert...I know, not the most serious or indepth discussion of his book...but I agree with his take on many issues.
Plus, he held his own with Colbert :)
Will have to pick it up-

I do think that saturated fats, high fructose corn syrup, manufactured foods and other dietary baddies do not help inflammation, and certainly lead to endothelial disfunction and possible stenosis and blockage. Eating whole, organic and real foods can only help the body.

I have since simplified my approach to eating with the following mantra: "If you don't kill it or harvest it, don't eat it!". It's a little easier for me than reading all the books! Seriously though, after I read your paper, I started trying to eat like that and I do feel better. I think I proved it to myself also because I 'fell off the wagon' for about a week and ate everything I used to and absolutely felt like hell. Bathrooming was harder, no energy. It's all good if it's from the farm and not the factory.
