my role at the ski and snowboard school is over for the season - even though it's still soooooo cold!!
i have a day off, maybe 2, and the prospect of some more relaxed weeks ahead this month.
i am spoiling myself.
in the fridge, i am marinating boneless skinless chicken breasts in fresh basil, parsley, lemon slices, olive oil, and white wine.
on the stove in the cast iron pans, i am sauteeing onions and mushrooms also in a splash of oil, dab of butter, and drop of wine.
the rice, spinach and parmesan are waiting their turn to join the fun.
when this all comes together i will be drooling over baked lemon herb chicken and portobello/spinach/parmesan risotto, with a nice sip of VQA unoaked chardonnay to round things out. since the bottle is already open ;)
sometimes, life is so good :D :D :D

Man, that sounds good. You wouldn't want to FedEx some of the leftovers?

You should come down here and teach skiing. We just had our first real snowfall of the season.

LOL! i have been tempted to try the fedexing of delicious food from remote places in the past. i thought maybe only in subzero weather, and just baked goods... but how do you know they won't crank the heat in the cargo bay en route? or get the munchies and break open the goods?

so px where are you at? it sounds fun :D

Well, you could write on the package "Medicine, must be kept refrigerated." That would solve the heat problem, and maybe the loading crew breaking open the package.

I'm in the mid-Atlantic, Maryland. It seems if we're going to get snow, it usually comes at the end of February, beginning of March. Just when we're thinking it's going to start getting warm. Of course, anybody up north would laugh at us, calling this a snowfall. But it did give me the day off work...

How has your ski season gone so far? Here it has been so-so, but it was dumping earlier today and the local hill is closed Monday and Tuesday. I foresee coming down with something on Wednesday...aka powder day.

hey there brother d-legs :D my season has been pretty ontario-style, aka groomed corn snow on a slight bump in the landscape!
i haven't made any excursions to anywhere good unfortunately... :( one day i will get me moved back to BC!!!
you and your powder day, trying to make me jealous aren't you

Yes. But it might not work. There's danger of melting and refreezing. Ugh.

LOL!! i am glad you liked. my friend and i just enjoyed some leftovers when we got in from singing class :) plus i made lentil veg soup using the chicken drippings. oh and by the way i noticed i messed up before - they were chicken thighs actually. i LOVE the mushroom spinach risotto, but i made it with brown rice this time and it took FOREVER
i have asparagus in the fridge too, i should have checked this earlier hehehe!

arg NHE you're terrible!

dignan, i hope it doesn't melt and refreeze that really is lame.
but i am not looking forward to having my nose rubbed in your powder runs either. 8O
