I found out about Dr. Wahls originally from the company I buy my grass fed meats from (she left a testimonial there). In her original videos and interviews, she stressed grass fed meats. I just read her book a couple of months ago and was shocked that she recommended organic meats as well. Nutritionally, there is a big difference from 100% grass fed meats to organic meats, especially with regard to their fat content.
The diet is without a doubt a hard one, especially the final stage. But the payoffs can be tremendous. My suggestion is not to try her diet but to do it without modification. And when it comes to meats, only eat 100% grass fed meats, and stick to the fattier cuts. In fact, you really need to do all of her protocol because all the parts of it work together.
I have been eating grass fed meats (on a limited basis) since my diagnosis over 1 1/2 years ago. Although I just read her book in the last couple of months, I started a diet like she recommends on my own (actually recommended from the owner of the ranch I get my grass fed meats from) in June, eating ONLY 100% grass fed meats (and the fatty cuts), wild fish (salmon, tuna, sardines), deep greens such as kale, spinach, Chinese greens such as Chinese broccoli and wild seafood (lobster crab, shrimp). I also take many supplements (contrary to her recommendation) including numerous 'green' supplements such as Spirulina, Cholorella, and Vitamineral Green to name a few. I have given up all fruit except for berries such as raspberries, black berries, blueberries and strawberries. And that is it. It is indeed an extremely hard diet. BUT I feel great, many of my symptoms have finally improved/disappeared and I continue to improve rapidly as of late. My energy level is off the charts. I saw my doctor yesterday and I have lost 45lbs in the last 1 1/2 years. And the most amazing thing is that I eat a tremendous amount of food! As Dr. Wahls recommends, I only eat two meals a day and I am NEVER hungry. It is amazing.
Exercise is critical. As hard as it may be to exercise, you MUST. Do what you can today and challenge yourself to do more than today tomorrow. And do that each and every day.
